How to: Sorghum Fruit Pico de Gallo


If you are a Mexican-food fan, you have experienced the deliciousness of pico de gallo. This Mexican staple is typically made of savory ingredients like roma tomatoes, white onions, peppers, cilantro and lime juice. While these traditional ingredients are perfectly tasty, why not mix things up a bit? Fruit pico de gallo is an excellent recipe to enjoy all summer! Pick your favorite fruits, such as watermelon, mango, papaya or pineapple, and dice them up for a perfect medley. To push the creative envelope a little further, we even added grain sorghum and sorghum syrup in this Sorghum Fruit Pico de Gallo. Sorghum Fruit Pico de Gallo

If you are a fan of pico de gallo and fresh fruit, this Sorghum Fruit Pico de Gallo is for you! This easy-to-make recipe is quite tasty and extremely customizable. To get started, gather the following ingredients:

  • 1 tablespoon lime juice
  • 1 teaspoon sorghum syrup
  • 1/8 teaspoon sea salt + as garnish
  • 1/8 teaspoon cayenne pepper + as garnish
  • 1 1/2 cups cooked and cooled whole grain sorghum
  • 1 cup mango or papaya, diced
  • 1 cup pineapple diced
  • 1 cup, watermelon, diced
  • 1 cup, seedless skinless cucumber or jicama, diced
  • 1 + teaspoon mint, chopped plus mint leaves for garnish
  • 1 lime, cut in wedges

 

Combine the lime juice, sorghum syrup, sea salt and cayenne pepper in a large bowl and mix together. The addition of sorghum syrup adds a subtle sweetness to the recipe that compliments the nutty flavor of whole grain sorghum, the tartness of the fruit and spice of the cayenne.

Next, add the cooked sorghum to the bowl and toss with the lime juice mixture. Either whole grain sorghum or pearled sorghum can be used in this recipe. The pleasant texture of sorghum is a nice addition to this pico recipe. Cook your sorghum in a pressure cooker to save time in the kitchen or prepare a large batch and store it in the refrigerator or freezer for easy use later.

 

Add the chopped fruit, cucumber and mint and stir together. Once combined, top with sea salt, cayenne pepper and mint leaves as garnish.
