Celiac Awareness Month and Sorghum


The Celiac Disease Foundation estimates nearly three million people in the United States have celiac disease, and could be higher according to a recent study by Edwin Liu et al. Celiac disease is a multi-system autoimmune disorder triggered by ingestion of gluten, which is a protein found in wheat, rye, barley and triticale, in genetically susceptible individuals. This disease damages the villi in the small intestine, and the Celiac Disease Foundation indicates that when this occurs, the rate of nutrient absorption is reduced. To provide a better understanding of the prominent disease, the National Foundation for Celiac Awareness is hosting Celiac Awareness Month this May.

An immune reaction can occur with exposure to less than one crumb of a gluten-containing food. Non-celiac gluten sensitivity, often referred to as a gluten-intolerance or sensitivity, can also negatively impact the human body. With this in mind, it is important for those with celiac disease and non-celiac gluten sensitivity to eat foods safe to consume that provide essential nutrients. Sorghum is a naturally gluten-free, nutritious whole grain ideal for those who require a gluten-free diet. Not only is sorghum high in fiber, it is also a good source of protein, B vitamins and iron.

Sorghum can be easily incorporated to fit any dietary need. Whole grain sorghum can be cooked like rice to make risottos. It is also an excellent ingredient in salads, soups and hardy side dishes. Plus, whole grain sorghum can be milled into a gluten-free flour, allowing those affected by celiac disease or non-celiac gluten sensitivity to enjoy some of their favorite baked goods. Various gluten-free retail products on grocery store shelves also contain sorghum like Multi-Grain Cheerios, Kashi Savory Bars and Amy’s Teriyaki Wrap, which provide convenient, ready-to-eat options.
