Sweet and Spicy Boneless Buffalo Wings

2 cups Nu Life Market’s Gluten Free All-Purpose Flour
2 tsp Paprika
1 tsp Garlic Salt
½ tsp Onion Powder
½ tsp Salt
1 tsp Pepper
1½ cup Coconut Milk
4 Boneless Skinless Chicken Breasts, cubed

For sauce:

¼ tsp Sun Life Natural Sunflower Spread
â…” cup Hot Sauce
½ cup Butter Flavored Palm Shortening
1½ tbsp Vinegar
¼ tsp Worcestershire
¼ tsp Garlic Powder
1 tsp Salt

  1. In a large mixing bowl, whisk together the Gluten Free All-Purpose Flour, paprika, garlic salt, onion powder, salt, and pepper; set aside.
  2. Using a medium bowl place the chicken and coconut milk together and let set for 20 minutes.
  3. Over medium heat, in a large sauce pan, combine Natural Sunflower Spread and the remaining sauce ingredients. Bring the sauce to a boil and remove from the heat, set aside.
  4. In a deep fryer, heat oil to 375°F.
  5. Remove the chicken from the milk mixture and place in the bowl with the breading mixture. Toss the chicken in the mixture until well coated.
  6. Place in the fryer for 3-5 minutes or until golden brown. Allow the oil to drain from the fried chicken pieces by placing them on a plate covered in paper towels.
  7. In a large bowl, pour the cooked sauce in the bottom and place the cooked chicken pieces in, stir until all pieces have been coated in sauce. Serve warm.
