Sorghum Salad with Grilled Veggies

3 cups cooked pearled sorghum
1 1/2 Tablespoons extra virgin olive oil
1 teaspoon fresh squeezed lemon juice
1/2 to 1 teaspoon salt (to taste )
1/4 teaspoon fresh ground black pepper
1 large red bell pepper
2 thick slices (3/8 inch ) from a medium onion
1 small yellow squash, sliced in half lengthwise
1 zucchini, sliced in half lengthwise
Vegetable oil for grilling
4 links mild flavored sausage (i.e.-sweet Italian ) 

Place cooked sorghum in a large bowl and toss with the olive oil, lemon juice, salt and pepper. Set aside. Meanwhile, preheat grill to medium-high. On a rimmed baking pan, drizzle the red pepper, onion slices, squash and zucchini with a light coating of the vegetable oil (to prevent it from sticking on the grill ). Place the vegetables and sausage on the grill, close the lid and cook for 3-4 minutes. Use tongs to turn the sausage and flip the vegetables; cook for another 3-4 minutes until nicely charred on both sides. Remove from the grill and cool. Slice the sausage thinly and add to the sorghum. Remove the stem and seeds from the pepper ; peel away and discard the skin. Dice the roasted pepper and grilled onion. Slice the squash and zucchini. Add all the vegetables to the sorghum and sausage; toss gently to combine. Taste and adjust seasoning, if desired. Enjoy!!
