Southwest Sorghum Salad

2 cups sorghum, cooked
1 can (15.25 ounce) whole kernel corn
1 cup cherry tomatoes, diced
1 large bunch of green onions, finely chopped
1 can (15.5 ounce) black beans, drained
1/3 cup olive oil
1 tablespoon apple cider vinegar
1 teaspoon lime juice
1 teaspoon honey
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon cilantro
1 teaspoon garlic powder

  1. Add sorghum to a large bowl and add corn, tomatoes, green onioins and black beans. Mix until well combined.
  2. Place olive oil, apple cider vinegar, lime juice, honey, paprika, cumin, cilantro and garlic powder in a blender. Mix in blender or food processor until smooth.
  3. Pour dressing over the sorghum mixture and mix well.
