Mushroom and Garlic Pearled Sorghum

1/2 cup of Nu Life Market Pearled Sorghum Grain
2 cups vegetable stock
1/4 onion, chopped
2 garlic cloves, minced
1 cup mushrooms, quartered
3–4 asparagus shoots
1/4 cup thyme, chopped

  1. Bring sorghum and veggie stock to a boil and simmer for approximately 50 minutes.
  2. In small skillet, over medium heat saute onion, garlic and mushrooms until tender. Add to cooked sorghum. Garnish with steamed asparagus shoots and fresh thyme. Serve.
