Lemon Cake Bites

3 cups Nu Life Market’s Gluten Free All-Purpose Flour
4 tsp Baking Powder
1 tsp Salt
2 Eggs
1 cup Sugar
1 cup Coconut Milk
½ cup Sunflower Oil
½ tsp Vanilla Extract
2 tsp Lemon Extract

  1. Preheat cake pop maker.
  2. In a large bowl gently whisk together flour, baking powder, and salt. In a medium bowl, whisk the eggs and sugar together until combined. Add in milk, oil, lemon extract, and vanilla. Whisk until well combined. Add the wet ingredient mixture to the dry ingredients. Fold in. Do not over mix. Batter will be thick and a little lumpy. Using a cooking scoop fill cake pop maker with batter, close the lid and flip to begin cooking.
  3. Cook for 3 minutes, flip cake pop maker back over and cook two more minutes. Remove from cake pop maker. Let cool on a wire rack. Dust with powdered sugar if desired.
