Sorghum Chicken Fiesta

1 lb grilled chicken
1 1/2 cups uncooked pearled grain sorghum
1 onion, sliced
1 green bell pepper, sliced
1 can Rotel, drained
1 can black beans, drained
2 teaspoons cumin
1 teaspoon garlic salt
Olive oil
1/4 cup chopped cilantro
Sliced avocado
Feta cheese
Salt and pepper to taste

  1. Add one and a half cups of uncooked pearled grain sorghum and three cups of water in a pan and bring to a boil. Boil on high for five minutes then reduce to a simmer on low for 50 minutes or until fully cooked. Fluff with a fork.
  2. Slice onion and bell pepper and add to a pan with olive oil. Sautee for 10-15 minutes. Remove when tender.
  3. In a large bowl, add sorghum, 1 tablespoon olive oil, cumin, garlic salt, and salt and pepper. Mix well. Feel free to mix in cilantro or use as a garnish.
  4. Plate the mixture. Top with cooked onions and bell peppers, sliced avocado, feta cheese and grilled chicken.
