Horchata

8 cups almond milk
½ cup sorghum (toasted, not burned)
½ cup sesame seeds (toasted, not burn)
1 cup brown sugar
Vanilla beans
½ cup vanilla syrup
1 tablespoon Saigon Cinnamon
¼ teaspoon salt 

  1. Place sorghum on a metal sheet pan and place in the oven at 350F for 30 to 35 minutes or until nice and golden brown.
  2. On a different metal sheet pan, add white sesame seeds and place in the oven at 350F for 20 to 25 minutes or until nice and golden brown.
  3. Then, place toasted sorghum and sesame seeds in a blender and blend for 1 or 2 minutes or until they resemble a fine powder. In the last few seconds of blending, add vanilla and cinnamon to blend well with other ingredients
  4. When done blending, pour powder in a container and add salt, brown sugar, vanilla syrup, almond milk and stir well. Let it set for 30 minutes before straining or sifting.
  5. After 30 minutes, use a dabble cheese cloth over a strainer and pour the horchata mixture to remove any particles of the sorghum or the sesame seeds, what you looking for is a smooth drink not sandy.
  6. Serve over ice.
