Yam and Pecan Pie

Sorghum Pie Crust Ingredients 

½ cup organic whole grain sorghum
½ cup  organic whole grain millet
½ cup arrowroot starch
½ cup  organic whole grain brown rice
1 teaspoon xanthan gum
1 teaspoon sea salt
¼ cup organic sugar
3/4 vegetable shortening  
1 tablespoon vinegar
½ cup cold water

Pie Filling Ingredients 

2 ¾ cups roasted yams
2 tablespoons sorghum flour
2 tablespoons arrowroot powder  
1 cup sorghum syrup
2 each Vanilla
1 tablespoon cinnamon
¼ teaspoon clove
¼ teaspoon nutmeg
¼ teaspoon salt
1 ½ cup pecan sauce 

Pecan Sauce Ingredients

¼ cup pecans
1 teaspoon Saigon Cinnamon, ground
1/4 teaspoon real kosher salt
1/8 cup organic brown sugar
1 cup organic maple syrup
2 tablespoons cornstarch (dissolved first in 1/8 cup water)
1 1/2 cups cater
½ cup margarine

Sorghum Pie Crust Instructions 

  1. In a blender add millet, sorghum, brown rice one at the time blend for 1 or 2 minutes or until it resembles a fine flour.
  2. When done blending pour mixture in to a metal bowl and add xanthan gum, arrowroot powder, salt, sugar and mix well.
  3. In the food processor, add flour mixture, cold shortening and pulse a few time to combine everything. Then add cold water, pulse a few more times and then take it out and place in a metal bowl. Using your hands, fold together to form a ball.
  4. To make the crust you need 11” inch pie ring. Place the dough in the pie ring and cover the whole pie ring with the dough. The crust must be about ¼” inch thick. Any leftover cut it and discard. When the crust is formed, poke it with a fork through the whole bottom of the crust to prevent the crust from bubbling.
  5. When done, place crust in the oven at 350F for 12 minutes. After the crust is cooked it is ready to add the filling.        

Pie Filling Instructions 

  1. Preheat the oven to 325F.
  2. In a blender add roasted yams, sorghum flour, arrowroot powder, sorghum syrup, vanilla bean, clove, cinnamon, nut meg, salt and blend for about 1 minute.
  3. When done blending, pour mix into the pie crust. Pour pecan sauce on top, spread evenly and place inside the oven at 325F for 45 min, when done, let cool before slicing.   

Pecan Sauce Instructions

  1. In sauce pan, add cinnamon, salt, brown sugar, maple syrup, water, corn starch and let mixture cook for 10 minutes.
  2. When done, place sauce in a metal bowl and let it cool down for 10 to 15 minutes.
  3. Add the cold margarine and mix well to prevent the sauce from breaking.
  4. Serve sauce at room temperature.
