1 1/4 cups sorghum flour
1 1/2 teaspoon xanthan gum
2 1/2 tablespoon powdered sugar
1 1/2 teaspoon baking powder
1/2 teaspoon salt
2 eggs, lightly beaten
2/3 cup milk
3 tablespoon butter
1 teaspoon vanilla
3 Granny Smith apples, peeled and diced
1/2 cup sorghum syrup (plus extra for drizzling)
powdered sugar for dusting
In a deep pot or deep fryer, heat oil to 375° F. In a large bowl, combine Sorghum flour, xanthan gum, powdered sugar, baking powder and salt. Stir in eggs, milk, butter and vanilla, just until combined. Stir apple pieces with sorghum syrup in another bowl, then add to batter. Drop spoonfuls of dough into oil and brown on both sides, for about 4 minutes. Remove with tongs and drain on paper towels. Drizzle with additional sorghum syrup, then dust with powdered sugar while still warm.
